End of the week catch-up

Thursday we did get to stay home so that was really nice. We got a bit of school work done, and I was able to prepare some food for a new ‘diet’ that Karl and I are trying. The South Beach Diet….I’ve had the book for quite some time. It’s been pretty good so far, but I’m afraid it’s proving to be expensive. It may be worth the extra money if I can actually lose the weight, but otherwise it is not. I have lost some already, so we’ll see what the week’s total is. Anyway, the food preparation has kept me busy, but it’s healthy and good, even the kids like most of what I’ve made. Would you believe they devoured the roasted peppers and eggplant?! It was pretty delicious……

Corbin and I will start a new book Monday, and I’m continuing to read Grandpa’s Box and Fountain of Life with Hailey.

    Is the SBD the one with more protein and low carbs? If so, that is also the plan that helps my boys insulin issues. Low sugar foods. 🙂 Roasted peppers and eggplant sounds yummy. I'm amazed that your kids ate it. Nice!

    Yes…no carbs for the first two weeks, then low carb….I have to say, I didn't make it. 😦 The food is great but I have a weakness for carbs…..may try again. I have to get my WILL fixed first.
